Eat With Me // Tacos Dorados & Salsa Verde

My best memories as a child come from sitting at a table with a mountain of piping hot tacos dorados in front of me. The salsa is simple but delicious, and its the same my abuelita made for my mom. With ingredients that we always have on hand, tacos dorados, or golden tacos, are a  favorite in our house. Add the DIY aspect with topping options, and its a quick and fun meal your family can enjoy too. Let us know what you think, and if you make it, post it and tag us!

Prep time: 15 minutes // Cook time: 5 minutes

Ingredients for Tacos Dorados:

1 package of Corn Tortillas
1 package of queso de freir (depending on how many tacos you'll be making, there is a 10 oz, 16 oz and a 2.5lb package)
1/2 cup of oil

Ingredients for Salsa Verde:

6-8 tomatillos
3 jalapeños
2 cloves of garlic
1/8 of an onion
A few sprigs of cilantro

Let's Work:

  1. Add all the tomatillos and jalapeños into a sauce pan with enough water to cover them, and bring to a rolling boil.
  2. Place a deep pan over low-medium  heat and add 1/2 cup of oil.
  3. Blend 6 tomatillos, 1 jalapeño, 2 cloves of garlic, cilantro, 1/2 cup of cold water and 1/8 of an onion.  Taste and add the extra tomatillos if its too spicy or the extra jalapeño if its too mild.
  4. Cut cheese into slices, and then again into halves.
  5. Warm a few tortillas at a time on a griddle for 30 seconds on each side or until soft.
  6. Fill each tortilla with one slice of cheese. Roll up each tortilla and secure with 2 toothpicks, set aside. Repeat until all the cheese is gone, or tortillas, whichever comes first.
  7. Fry about 4 or 5 of the tacos at a time, seam side down, until golden brown and crisp, about 4-5 minutes. Make sure the oil isn't too hot and the cheese inside is melted.
  8. Transfer tacos to a paper towel-lined plate to help soak up the excess oil. 
  9. Remove toothpicks, serve, add salsa verde, toppings of choice (I like to add refried beans, sour cream, lettuce and cotija cheese) and enjoy!
